Because barber/hair salons tailor their hours for appts to the typical Mon-Fri, 9 to 5 worker.
Saturday is a more convenient day to schedule hair cuts for the Mon-Fri workpeople and their children.
Monday is the hair salon's day off!
For a lot of businesses that are independently owned, the owner has to be there at all times. It would make no sense to take off on a Saturday, so they close on what would typical be a slow day.
Because they are usually open on Saturdays for clients who can't come in during the ';work week';. They close down on Mondays so their employees can have a two day weekend.

They are generally closed on Sundays and Mondays due to the fact that Saturday is a very profitable day for making money and it allows for two day weekends to close on a slower day such as Monday.
